Never had that fish. I'd imagine some fillets. Coated with butter, salt, and some lemon slices, all wrapped in foil, thrown on the bbq?
It's a rainbow trout that has traveled from its birth place to the ocean and then back up river towards there birthplace to spawn. These fish are B run which means this is their second trip back from the ocean. A 700 mile trip one way. They generally don't make it back a third time due to lifespan.
